unequal;

2019.Flowering: very early; unequal ,between may 6-25, 2019; warm
and dry winter, December the sap does not rest (I cry); spring little rainy and
unstable with hot and cold days, may attack mildew on our plots, causing heavy
losses due to mildew larvae; cool summer, august started rainy and ended hot;
conducive to maturation.Harvest: started

Vinification:
Clusters
selected by hand in the vineyards. Quickly transported to the winery in 15 kg crates. 100% of the grapes foot-trodden in open
plastic vessels with 100% whole-clusters included. Pneumatic press for a low
pressure pressing. Fermented with its
own yeasts ,without static settling, at
a controlled temperature and without the use of any additional product apart
from SO2. in 1 bocoi old chestnut +-90 years of 1.900L. and 1
barrel of used French oak 2008
(Boutes cooperage) of 500L. Batonage
weekly for 1 month and aging on its lees for 7 months until bottling. Bottling without tartaric stabilization
by cold, without clarification, filtered and SO2 in moderate doses.
