vintage: Brudbreak: early,
unequal;
on february 17,
2019.Flowering: very early; unequal ,between may 6-25, 2019; warm
and dry winter, December the sap does not rest (I cry); spring little rainy and
unstable with hot and cold days, may attack mildew on our plots, causing heavy
losses due to mildew larvae; cool summer, august started rainy and ended hot;
conducive to maturation.Harvest: started
september 2
and closed september 28,

Vinification:
Clusters
selected by hand in the vineyards. Quickly transported to the winery in 15 kg crates. The grapes were not destemmed
before going into a pneumatic press for a low pressure pressing. Fermented with its own yeasts ,without static
settling, at a controlled temperature
and without the use of any additional product apart from SO2, in 5 barrels of used French oak: 1 of
cooperage Demptos
(2006) of 500L., 2 of cooperage Dammy (2014) of 450L., 1 of cooperage Radoux
(2008) of 500L. and 1 of cooperage Doreau (2010) of 500L. Batonage
weekly for 1 month and aging on its lees for 9 months until bottling. Bottling
without tartaric stabilization by cold, without clarification, filtered and SO2
in moderate doses.
