vintage: Winter
begins dry and final cold-rainy, brudbreak late;
Spring continued cold-rainy and just hot, flowering normal; Summer too cool-wet delayed maturation but August
dry-hot +30° precipitating it in 15 days; Harvest started 9/10 and ended 10/6
of 2018.
Vinification: Clusters selected by hand in the vineyards. Quickly
transported to the winery in 15 kg
crates. 100% of the grapes foot-trodden in open plastic vessels with 100%
whole-clusters included. Skin-fermented with its own yeasts and without the use
of any additional product apart from sulphur in for 20 days in a
vat. Pressed in a vertical press for a low pressure pressing and
aging in 1 barrel of used French oak
(2008) of 500 liters (Boutes). Batonage weekly for 3 months
and aging on its lees for 11 months until bottling. Bottling without tartaric
stabilization by cold, without clarification, filtered and with modest levels of SO2.
Bottled: August 21, 2019 (fruit day -waning moon). Aging in bottle for 3
months.
Production: 636 bottles.
