vintage: Warm winter. Early
sprout march 17-19. Hot spring and summer with high temperatures but constant
that caused an optimal maturation without caused hydric stress. Beginning of
harvest on august 30,2017.
18 vintage: Winter
begins dry and final cold-rainy, brudbreak late;
Spring continued cold-rainy and just hot, flowering normal; Summer too cool-wet delayed maturation
but August dry-hot +30° precipitating it in 15 days; harvest started 9/10 and
ended 10/6 of 2018.
Vinification:
Clusters
selected by hand in the vineyards. Quickly transported to the winery in 15 kg crates. Foot-trodden with 100%
whole-clusters in in
vats, separating the grapes.
Alcoholic
fermentation and part of the malolactic with the skins for 21 days with the
subsequent pressing in vertical press.
Malolatic
fermentation
65% in
used French oak barrels and
35% Stainless
without the use of any additional product.
Aging
on its lees for 20 months (harvest 17) and 9months (harvest 18) until bottling. Bottling without
clarification, filtered and with modest
levels of SO2.

20% harvest 17 + 80% harvest 18; Aging in bottle for 10 months.
